Corn Chip Chili
Recipe: Corn Chip Chili
Ingredients
- 1 1/2 cups onion, chopped
- 1 tablespoon vegetable oil
- 1 clove garlic
- 1 1 /2 pounds ground beef
- 3(16 ounce) cans black or red beans, drained
- 1 (20 ounce) can enchilada sauce
- 2 cups cheddar cheese, grated
- 1 1/2 tablespoon chili powder
- 4-6 cups tortilla or corn chips
- 1 cup plain yogurt or sour cream
- 1 tablespoon cilantro, chopped finely
- 1/2 teaspoon cumin
Instructions
- Brown onions in oil for 3 minutes.
- Add garlic and beef and cook until meat is browned; drain off fat.
- Add drained beans, enchilada sauce, cheese, chili powder and stir well.
- Arrange chips in a greased 3 quart casserole and top with meat and bean mixture.
- Bake at 350 degrees for 30 minutes.
- Meanwhile, mix yogurt with cilantro and cumin.
- When ready to serve, pass this sauce to spoon over corn chip chili.
- Serves 8-10
