Coconut Rice Pudding

Ingredients
- 3 eggs
- 1 cup cooked rice
- 1 cup coconut milk
- ½ cup milk
- ⅓ cup sugar
- ½ tsp nutmeg
- 1 tsp vanilla extract
Directions
- Pre-heat the oven to 325°F.
- In casserole, combine eggs, rice, coconut milk, milk, sugar, nutmeg, and vanilla extract.
- Bake for 45 minutes.
