Coconut Rice Pudding

Ingredients

  • 3 eggs
  • 1 cup cooked rice
  • 1 cup coconut milk
  • ½ cup milk
  • ⅓ cup sugar
  • ½ tsp nutmeg
  • 1 tsp vanilla extract

Directions

  1. Pre-heat the oven to 325°F.
  2. In casserole, combine eggs, rice, coconut milk, milk, sugar, nutmeg, and vanilla extract.
  3. Bake for 45 minutes.
