Eggplant Parmigana

1 large eggplant
olive oil
salt
pepper
mozzarella cheese
parmesan cheese
flour
bread crumbs
marinara sauce
2 eggs
milk

Peel eggplant and cut into slices. Add olive oil to med heat. In the meantime,  create an eggwash with the eggs and the milk; season with salt and pepper. Dip cut eggplant into the eggwash and then dip into flour and then into the bread crumbs. Add the eggplant to the olive oil and brown about 3 minutes on each side. Take out of the oil and place on a paper towel to drain. Then in a baking dish add enough marinara to cover the bottom. Then add the eggplant, marina sauce, parmesan cheese and mozzarella cheese. Keep layering and add cheese on top. Bake for about 10-15 minutes until cheese is bubbly. Delish!!!
